Eggnog screams the holidays. Think Dickensian London, Tiny Tim, roaring fires in a pub and rosy-cheeked people downing big glasses of this wonderfully sweet and rich drink. Not surprisingly, it’s been around for what seems like forever. Historically, it is also known as a milk punch or an egg milk punch when it is laced with brandy, rum, whiskey or bourbon. Unfortunately, it can also scream unhealthy thanks to its heavy reliance on milk, cream, sugar, eggs and, if used, liquor. The good news is that there are lots of ways to lessen the nutritional concerns of traditional eggnog while maintaining its wonderful allure. Cheers for healthier eggnog! Ingredients
- Twocupsmilk of your choicedivided
- Threelargeeggs
- Three tablespoonscoconut sugar
- One teaspoonvanilla
- Tiny pinchsea salt
- Five-10dropsliquid stevia
- One quarter to half teaspoon nutmeg to your liking
Instructions
- Warm a cup of milk in a small saucepan.
- Separately whisk together the eggs and sugar in another medium saucepan.
- Slowly combine the warm milk into the pan with the eggs and sugar and whisk together. The process needs to be done slowly so the eggs don’t overheat and scramble.
- Heat the mixture on medium low temperature, stirring continuously until it thickens slightly and reaches a temperature of 160 degrees. This should take one to two minutes. Don’t heat longer or you’ll risk curdling the mixture.
- Once complete, remove the mixture from the heat and slowly stir in the remaining ingredients: cup of milk, vanilla, salt, stevia and nutmeg. Nutmeg can be added to taste.
Finishing Touches
- Chill the mixture for at least an hour until it is cold. Serve and enjoy.
