Easy Going BBQ Chicken & Butternut Squash

Too often people are forced to choose between easy and unhealthy and hard and nutritious when it comes to their meal choices. That’s not the case with this recipe from Lillie Eats & Tells. This chicken and butternut squash recipe can be put together in 30 minutes, especially if a rotisserie chicken or cooked chicken breast is already on hand. It is tasty, loaded with vegetables, macro-friendly and gluten-free.

This recipe is not only macro-friendly and gluten-free, but the fat content can also be lowered by substituting low- or no-fat cheeses and yogurt.

Ingredients:

  • Half a butternut squash peeled and chopped into small squares (380g)
  • One-half tbsp of olive oil
  • Two cloves of minced garlic
  • One cup of onion diced (100g)
  • Two tsp of kosher salt
  • Two tsp of cumin
  • One tsp of chili powder
  • One-half tsp of paprika
  • A one-pound bag of frozen cauliflower florets
  • Three cups rotisserie or other cooked chicken breast chopped
  • One cup of fresh or frozen corn
  • One oz Greek cream cheese or reduced-fat cream cheese
  • One-third cup of nonfat Greek yogurt
  • Two tbsp Kinder no sugar BBQ sauce
  • Two oz of grated gruyere or sharp cheddar cheese
  • Chopped cilantro

Instructions:

  1. Start by heating a heavy-bottomed pan. Apply a light spray of olive oil, layer in the butternut squash and then apply another spritz of oil.
  2. Cook for five to 10 minutes, stirring frequently. Once the squash starts to get tender, toss in the garlic, onion and dry seasonings and then cook for another minute.
  3. The cauliflower florets should now be added. Keep cooking for up to another 10 minutes until all the vegetables reach their preferred tenderness.
  4. At this point, the corn and chicken can be added. Once combined, mix in the cream cheese and Greek yogurt, smooth the top, drizzle in the BBQ sauce and sprinkle with the preferred grated cheese.
  5. Broil for 2-4 minutes until your cheese is melted.
  6. Chopped cilantro and diced red onion should now be sprinkled over the top.

Notes:

The dish can be served with chopped cherry tomatoes, fresh avocado, additional cilantro and BBQ sauce as desired. The mix can also be served on a pile of lettuce or brown rice.
