Ingredients
Crust
- Two cups of sugar-free cookies crushed (see sugar-free cookies recipe)
- One-half cup of keto brown sugar
- One-third cup of butter
Filling
- One cup of nonfat cream cheese
- Two cups of nonfat Greek yogurt
- Two large eggs
- Two-thirds cup of keto brown sugar
- One-quarter cup of flour
- One-quarter teaspoon of salt
- One teaspoon of vanilla extract
Instructions
- The oven should be preheated to 325F.
- Combine and whisk crushed cookies, brown sugar and melted butter together.
- Transfer into a greased 8-inch springform pan, forming a layer on the bottom of the pan.
- Mix all of the cheesecake filling ingredients in a blender until they are smooth.
- Transfer the mixture into the spring pan.
- Bake for up to 55 minutes or until the middle of the cake is fully cooked. Test by inserting a clean knife or fork into the middle of the cheesecake to see if the batter is still wet.
- Once baking is finished, let the cake sit out at room temperature until it cools.
- Refrigerate for at least four hours.
- Top it with fresh fruit for a naturally sweet touch.
Notes
Cheesecakes have a long shelf life. They can stay serving ready for up to two weeks in the refrigerator and up to six months if packed properly in a freezer.
