Ordering Up Turkey Meatloaf Muffins

Ingredients

  • One cup diced onion
  • Two stalks of celery diced
  • One red bell pepper diced
  • Two chopped cloves of garlic
  • One-half tbsp. of Worcestershire sauce
  • One-half cup of low-sodium chicken broth
  • Two lbs. of ground turkey (the recipe used 1.5lb. extra lean + .5 lb. dark)
  • One-half cup of egg whites
  • One cup of quick-cooking oats
  • Two tsp. of ground cumin
  • One tsp. of ground chipotle pepper spice
  • One tbsp. of garlic powder
  • One tsp. of black pepper
  • One tsp. of salt

Instructions

  1. Preheat the oven to 375 and coat a 12-cup muffin pan with cooking spray or a thin coat of olive or coconut oil).
  2. Heat a medium pan over medium-high heat and add onion, celery, bell pepper and garlic.
  3. Season with salt and pepper and cook for five to six minutes.
  4. Blend in Worcestershire sauce and chicken broth. Cook for another five minutes until the vegetables are tender. Remove from heat and allow the ingredients to cool.
  5. Separately in a large bowl, combine ground turkey, egg whites, oats, cumin, chipotle spice, garlic powder, black pepper and salt.
  6. Mix in the cooked veggies and combine until well incorporated.
  7. Roll the mixture into 12 even balls, placing each one in the muffin pan.
  8. Bake for 25-30 minutes or until cooked through.

Notes:

These muffins stay well in a refrigerator for several days when wrapped well. Just reheat gently and serve.
