It is easy to make, filling, high in fiber and low in saturated fat. It is worth the effort.

Ingredients:
- One-quarter cup of mayonnaise or vegan mayonnaise
- One to two tablespoons of sriracha
- One tablespoon of tomato paste
- Two tablespoons of olive oil
- One pound of creamer or small purple Peruvian potatoes, cut in half
- One-half teaspoon salt
- One-quarter teaspoon freshly ground black pepper
- One pound baby kale, trimmed
Instructions:
- Whisk mayonnaise in a small bowl along with the sriracha, tomato paste and one tablespoon of warm water. Set aside.
- Heat the olive oil in a cast-iron skillet over medium heat, adding in potatoes, cut side down. Cook for 12 to 15 minutes, turning over occasionally until potatoes start to brown.
- Sprinkle with the salt and pepper and cook for five minutes or until fork tender. Transfer to a separate plate.
- Place the kale in the same hot skillet, cooking for five to seven minutes until the kale is tender.
- Combine kale with potatoes, drizzle with the mayo mixture and serve immediately.
